Happy Friday Friends! We’ve made it…the glorious weekend! I woke up this morning to thick fog hanging in the air and below freezing temperatures. It’s kind of dreary out there with no sunshine at all. It made me laugh, thinking about Punxsutawney Phil predicting an early spring. Did you know that there are at least 3 other ground hogs predicting weather? I had no idea! Shubenacadie Sam in Canada, Staten Island Chuck in New York and General Beau Lee in Georgia and they all agreed with Phil that there would be an early spring. I guess you learn something new every day but it also raised a bunch of questions for me, most importantly why do we need 4 groundhogs to predict the weather? They aren’t even very good at it. It also makes me wonder if there was some sort of groundhog conspiracy going on here?? I bet they are getting a big old laugh out of us down in their little burrows. Well, I digress…Soup! Lets get back on track. It’s February, it’s cold, it’s the perfect day for soup. I thought I would share one of my favorite cold, wintery day recipes. It’s really easy to just toss in the crock pot and come home to something warm and filling for dinner.
In a frying pan, brown the ground beef and chopped onion. I use ground beef but you could use small pieces of stew meat, beef or wild game. Drain the meat if necessary, I sometimes like to rinse mine just to get rid of as much of the grease as I can. While you are browning the meat you can chop the carrot, celery, celery leaves and potato into small pieces.
Put the vegetables in the slow cooker. Add the canned corn (drained), diced tomatoes, tomato sauce, and soy sauce. Add the beef mixture, all of the spices and pour in water. I will sometimes use half water and half beef broth. This basically comes down to preference. I have made it both ways. Stir it all together. Set the slow cooker to high for 4 hours or low for 8 hours.
Yum!! I love eating mine with saltines. You could serve it with rolls and a salad to make it more of a meal. Enjoy!

Slow Cooker Vegetable Soup
Prep time: 10 mins Servings: 12
Cook Time: 4-8 hours
2 lbs lean ground beef
1 white onion, peeled and diced
1/4 teaspoon pepper, to taste
1/2 teaspoon oregano
1/2 teaspoon dry basil
1/4 teaspoon seasoning salt
1 envelope of onion soup mix
6 cups water, more to desired consistency
1 (8 ounce) cans tomato saucse
1 tablespoon soy sauce
1 (15 ounce) cans diced tomatoes, undrained
1 (15 ounce) canned corn, drained
1 cup celery, sliced
1/4 cup chopped celery leaves
1 cup fresh carrot, sliced
1 cup russet potatoes, peeled and cut into small pieces
garlic to taste
Brown ground beef and onion in a frying pan. Drain. While the meat is cooking chop, carrots, celery, celery leaves, and potatoes. Put the vegetables in the slow cooker. Add corn, tomato sauce, diced tomatoes, soy sauce and spices. When the meat is done add it to the vegetables. Pour in the water and mix it all together.
